When avocado season is over, its skyrocketing price has left us all for dead and you’re walking wistfully past piles in the grocery store, it’s time to get creative.
For this, I recommend making use of seasonal fruit and vegetables. Currently at their most flavourful, rich in nutrients and far cheaper than paying a fortune for their out of season counterparts, foods like mango, watermelon and spinach are perfect for these three cheap, easy and delicious summer salads.
Egg and Spinach
Name a better duo than eggs and mayonnaise? Kick your egg salad up a notch by adding a dollop of Dijon mustard and a handful of raw baby spinach for a good dose of vitamin C, iron and calcium. Plop some cold on hot buttered wholewheat toast for a nutritious breakfast, lunch or dinner.
Mango Salad
Technically more of a salsa than a salad, this mango mix is fresh, clean and easy to make. Chop some mango, cilantro (coriander), red pepper and red onion into small pieces and mix it all together in a bowl. If you like a sweeter taste, you’re ready to go but for some extra zing add a drizzle of lime or lemon juice, some chopped jalapeno and some salt to taste. Great on its own, on fish tacos or whatever you please, this colourful dish is nutrient rich and packed with flavour.
Watermelon Salad
Hydrating and healthful, watermelon is in season and effortlessly elevated with chunks of feta cheese. Drizzle a little olive oil over squares of watermelon and feta and add cucumber, lime juice or mint as per your fancy for a salty sweet afternoon or after dinner treat.
